Lemon-Blueberry Muffins

This was a recipe I tried out of The Joy of Vegan Baking this past weekend. I love blueberries, and the berries available at my local grocers looked amazing, so this was the option I went with.

I'm new to this book in particular and vegan baking in general, so there's some trial-and-error involved. As I continue to test this recipe, I'll adjust this blog with modifications.

Some things I did slightly different:

I don't have a lemon zester, so I used the finer edge on my all-purpose grater, which seemed to work fine.

Normally for high-altitude baking, you use a bit more flour; I will be trying that next time, upping the amount by half a cup until I get the consistency I want. (These muffins are very good, but a little bit dense.
